My Experience With It

For me, taking the time to hand-sharpen knives just isn’t in the cards.

I’ve got around 30 knives in my kitchen, and about half of them see regular daily use. I need something that’s quick, consistent, and doesn’t turn into a whole process.

The three stages on this sharpener make it easy to either fine-tune a knife that’s not quite sharp enough, or bring an old one back to life.

I’ve had chefs bring in knives from home that looked beyond saving with nicks in the blade, completely dull, and looked like something you should give up on. Running them through the coarse first stage let me rebuild the edge, then refine it with the next two stages. That’s something that would take a lot more time with a manual sharpener.

For my own knife – the Victorinox 8″ Chef’s Knife – I usually just use the finest stage once a week to bring the edge back. After that, a quick pass on a honing steel and it’s consistently very sharp.

I might use the second stage a couple times a year to reset the edge, but most of the time, that third stage is all it needs.

Some quick tips after using this:

  • Use the angle adjustment lever in the middle (I usually stick with the thinnest setting)
  • Keep the blade lightly pressed against the side guides so the angle stays consistent
  • Start at the base of the knife and pull through in one controlled motion
  • Don’t let your knife rest on the stone, immediately pull it through
  • Let the machine do the work, there’s no need to press hard
  • A quick pass on a honing steel after sharpening will straighten your edge out for the finishing touch

What It’s Not

This isn’t an incredibly precise sharpening system.

That’s not to say that you can’t carefully use this machine to create a VERY sharp knife, but if you’re chasing a perfect, razor-level edge or working with very high-end knives, there are better (and slower) ways to do it.

This is more about:

  • Getting your knives sharp enough to work properly
  • Not spending a bunch of time doing it

For most kitchens, that’s exactly what you want.

Who This Is For

This is great for anyone who cooks regularly, or if you’ve caught them complaining about their knives being dull.

If you don’t want to buy new knives every time they get dull, and want to put a serious edge on them, this will do the job. Pair it with something like a quality maple cutting board, and there will be nothing stopping you from prepping like a pro.
